Strawberry, Turkey & Spinach Summer Salad Recipe

Summer is just around the corner! Many of us choose to host backyard gatherings with friends and family during the summer months; these backyard get-togethers allow us to come together over delicious food and refreshing cold beverages—all under the gorgeous summer sun.

Though BBQ may be the first thing that comes to mind when coming up with a menu for your next backyard celebration, how about choosing a lighter option that’s perfect for the season, a summer salad?

  • 6 cups of baby spinach
  • 2 cups roasted turkey breast, julienned
  • 2 cups fresh strawberries, sliced
  • 1 small sweet yellow bell pepper, julienned
  • 4 green onions, sliced


  • ¼ cup red wine vinegar
  • 3 tbs. olive oil
  • 2 tbs. water
  • 4 tsp. natural honey
  • ½ tsp. dried minced onion
  • ½ tsp. salt
  • ¼ tsp. black pepper

The ceremony begins at noon local time in England, but for those of us in the United States, here’s when we can catch the main event:

  • 7 a.m. EST
  • 1 a.m. PST

We think having an “Afternoon Tea” themed soiree is a fitting idea. As Americans, many of us are probably a bit unfamiliar with the idea of Afternoon Tea, so what exactly is it? Afternoon Tea was introduced in Britain in the early 1840s as an afternoon tea-related ritual that involves a mini meal to stem the hunger and anticipation of that evening’s meal. Typically, Afternoon Tea is a meal composed of finger sandwiches, scones with clotted cream and jam, sweet pastries, cakes, and of course, tea.

While the news outlets are covering all of the events leading up to the ceremony, why not enjoy some Afternoon Tea (or very early morning tea in America’s case) with your guests? Choose a delicate tablecloth to set the scene, and use elegant tiered stands to showcase the finger sandwiches and assorted sweets.

Rhubarb Jelly Recipe

  • 4 1/2 lbs. rhubarb
  • 2 1/2 cups water
  • 3 3/4 cups orange juice
  • 2 1/2 cups sugar
  • 1 lemon
  • 1 vanilla bean pod


  • Wash the rhubarb and dice finely
  • Add the water and rhubarb to a sauce pot and bring to a boil
  • Once boiling, allow to simmer until the rhubarb falls apart
  • Pass the mixture through a strainer and allow to cool
  • Mix the orange juice with the sugar and the juice of 1 lemon in a pan and bring to a boil
  • Once the mixture begins to bubble, allow to cook for 3 minutes, stirring continuously
  • Dice 1 vanilla bean pod and add it to the pan
  • Allow to simmer for a few more minutes then remove any foam with a ladle
  • Pour the finished jelly into a screw-top jars
